One word, two countries.
Bread came to Mexico from Europe and to Japan from Portugal, and both countries fell for the same word: pan. Pan Brent is what happens when the two traditions share a kitchen.
Brent, an Austin accountant who traded spreadsheets for dough, trained with panaderos in CDMX and bakers in Tokyo before opening on Calle Colima. The menu is the overlap of the two bread cultures: the concha gets a matcha crust, the curry pan gets birria, the café de olla gets whisked with matcha. The sourdough starter is named Balance, because it has to be fed every day, like a good ledger.
🐾 Perros bienvenidos
The terrace is dog friendly, with water bowls out front and a free galletita for every good dog. Named for Noodle and Scooby, the two dachshunds who approved the terrace personally.
🍞 Tangzhong, siempre
Our milk breads use the tangzhong method for that just-baked softness that lasts for days. The sourdough program stays 100% natural ferment.
